Departmental Overview

In the Division of Student Affairs and under the Residential Student Services Programs portfolio, Berkeley Dining is a self-operated dining program focused on culinary excellence, social responsibility and supporting the living/learning environment of our customers. With more than 12,000 meal plan holders, Berkeley Dining serves over 5 million meals per year in 14 facilities with a combination of residential "all you care to eat" dining, retail "a la carte" dining, training, early childhood education meal production, and catering. Berkeley Dining services the campus seven days per week, seventeen hours per day employing 450 full and part time staff and approximately 400 Cal student workers across multiple locations.

Position Summary

Involves all aspects of food service in a restaurants, catering or retail food operations, including preparation, serving and presentation of food and beverages; dining and serving area set up; cleaning of the facilities, equipment and tableware; customer service, and executing transactions.

The primary emphasis of this position focuses on business management practices (i.e. operations management, financial controls including profit generation, human resource management, interdepartmental relations, and research and development, project management, menu/product change management, monitoring vendor relationships and conference programs.) Maintains positive customer relationships and interactions. This position is responsible for providing excellent quality and nutritious meals in a safe and aesthetically pleasing environment.

This position will oversee multiple locations, but may be reassigned location(s) depending on business needs.

Responsibilities

  • Develops and monitors budgets.
  • Control financial operation with approved budgets.
  • Monitor and maintain operational costs of unit that include food cost, labor costs and supplies.
  • Monitor and enforce cash handling policies and procedures.
  • In addition, the GM will be the liaison between facilities to insure the repair and maintenance is being performed.
  • Ability to direct executive chef in cycle menu planning.
  • Support the maintenance, cleaning, fueling and use of university-owned vehicles per University guidelines and policies
  • Drive vehicle to transport, pick-up and/or drop-off items such as marketing materials, tabling and events materials, food goods and supplies, kitchen equipment, uniform, and/or shoes, operational materials, or other operational needs that can be transferred amongst the larger team.
  • Depending on schedule, location, and operational needs incumbent may be the Vehicle key, or gas card custodian which may result in direct responsibility in refueling and/or maintaining the vehicle.
  • Regardless of Dining location, the incumbent may be responsible for supporting Drivers with the maintenance of university-owned vehicles due to employees' time constraints and/or unit and departmental operational needs.
  • Develops schedules, designs serving and seating area set-up, and administers and monitors performance requirements.
  • Responsible for payroll of all staff.
  • Maintain appropriate staffing levels to meet business needs.
  • Responsible for recruiting, hiring, training and evaluating staff.
  • Recognizes and acknowledges outstanding staff performance.
  • Supports and encourages staff development.
  • Approves Cal time within 48hours of the end of the month.
  • Ability to maintain staff and keep attrition rates low.
  • Leads by example in working a variety of shifts including nights, weekends and holidays.
  • Ability to use University systems such as Cal Answers, Tablaeu, and UCPath.
  • Enforces, reviews, and interprets safety and sanitation policies and procedures.
  • Audits and ensures compliance of food prep to QA standards and safety/security related to handling and preparation of food.
  • Insures operations are kept neat clean and organized.
  • Manages food inventories, vendor deliveries, food preparation, and menu planning while adhering to strict regulatory guidelines.
  • Develops pars for ordering and minimizing waste.
  • Ensures appropriate use and care of kitchen and food service equipment, facilities, and materials.
  • Has a SAS notebook in office with SAS requirements and printed forms to validate compliance.
  • Assists functional unit as needed.
  • May be required to operate a campus vehicle.
  • Develops, implements and maintains exceptional customer service standards.

Required Qualifications

  • Strong knowledge in food service and sanitation regulations.
  • Strong verbal and written communication skills in the English language, including active listening, dynamic flexibility, and critical thinking, and ability to multi-task and ensure effective time management.
  • Strong decision-making and reasoning skills, and ability to develop original ideas to solve problems and conduct operations analysis and quality control analysis.
  • Strong and effective interpersonal and work leadership skills to provide guidance to all levels of personnel.
  • Intermediate computer application skills.
  • Strong budgetary and financial acumen experience and background
  • High school diploma and/or equivalent experience/training.
  • Lead/supervisory experience.

Preferred Qualifications

  • Lead/supervisory experience in the food service industry.
  • B.A. in Food Service Management and/or equivalent experience/training.

Under California law, the University of California, Berkeley is required to provide a reasonable estimate of the compensation range for this role and should not offer a salary outside of the range posted in this job announcement. This range takes into account the wide range of factors that are considered in making compensation decisions including but not limited to experience, skills, knowledge, abilities, education, licensure and certifications, analysis of internal equity, and other business and organizational needs. It is not typical for an individual to be offered a salary at or near the top of the range for a position. Salary offers are determined based on final candidate qualifications and experience.

The full pay scale for this classification is $82,800.00 - $149,800.00. The budgeted annual salary range that the University reasonably expects to pay for this position is: $88,000 - $100,000.

  • This is a full-time (40 hours/week), career position that is eligible for UC Benefits.
  • This is an exempt monthly-paid position.
